I’ve substituted ricotta for tesco’s low-fat cottage cheese. Just popped the mushroom in the oven for 10 minutes and it smells so appetizing. the lemon, chilli, oregano trio there makes everything come together. Jamie uses these elements in his food all the time… olive oil, lemon, and chili. I am liking it myself!

when there’s a craving for cheesecake, this one is a good substitute. yummy Swedish pepparkakor becomes the base. no extra butter in there… topped first with reduced fat cream cheese and finished with some fresh blue berries and a drizzle of sweet honey. yummy!
maybe it was the milk I used in the poolish, or maybe I didn’t knead it long enough… the bread was fragrant, with a nice enough chew… though I wanted more holes in it.
